Part of my meal plan is to incorporate as many vegetables in my diet as possible and I love arugula in my salads. Adding pumpkin or sunflower seeds adds flavor and texture, and are good sources of zinc, iron, magnesium and manganese.

And if you like cheese, but avoid dairy, cashew cheese is a great substitute!

Ingredients:

  • 3 bunches of organic arugula, washed and dried
  • 1/2 cup extra virgin olive oil
  • Juice of 1 whole lemon and 2 tablespoons of apple cider vinegar
  • 4 tablespoons of raw pumpkin seeds or raw sunflower seeds
  • 8 tablespoons Treeline brand, Classic Hard Cheese, crumbled (cashew cheese, dairy-free )
  • Salt and freshly ground pepper, to taste

Directions:

In a serving bowl, drizzle arugula with oil, squeeze in lemon juice and add apple cider vinegar.

Toss and mix, then add salt and pepper.

Next, add pumpkin or sunflower seeds (or both).

Lastly, add cheese and toss to integrate completely. Serve and enjoy!
