Makes 6 servings
3 bunches of organic arugula, washed and dried
1/2 cup extra virgin olive oil
Juice of 1 whole lemon and 2 tablespoons of apple cider vinegar
4 tablespoons of raw pumpkin seeds or raw sunflower seeds
8 tablespoons Treeline brand, Classic Hard Cheese, crumbled (cashew cheese, dairy free )
Salt and freshly ground pepper, to taste
In a serving bowl, drizzle arugula with oil, squeeze in lemon juice and add apple cider vinegar. Toss and mix, then add salt and pepper. Next, add pumpkin or sunflower seeds (or both). Lastly, add cheese and toss to integrate completely.
