Although the holidays are over, the smell of fresh cinnamon always makes me think of Christmas. My family and I used to go to Oak Glen, California to pick apples right off the tree and the whole town smelled of everything apple.
Baked apples are a delicious, healthy snack or dessert that the whole family will enjoy. The pectin in apples is a great source of fiber and cinnamon aids in digestion. Try using different apples and see which ones you prefer!
Ingredients:
- 1 teaspoon of organic cinnamon, ground
- 2 tablespoons raw honey, organic
- 1/4 cup chopped walnuts or pecans
- 1/4 cup fresh pomegranate seeds
- 2 tablespoons of almond flour or almond meal
- 2 tablespoons of organic coconut oil
- 4 large organic apples, tart green or golden delicious work well
- Cinnamon sticks, for garnish
Directions:
Preheat oven to 375 degrees Fahrenheit.
Slice the tops of the apples and scoop out the core. This should leave a nice round well to fill the inside. Mix with a spoon or hands: pomegranate seeds, nuts, cinnamon, almond meal/flour and honey. Make sure all ingredients are coated evenly.
Place in a shallow baking dish and bake in oven for 15-20 minutes or until apples are tender and caramelized. Allow to cool before serving.
Makes 4 servings.
