As a kid, I always loved pudding as a treat, especially chocolate. Most of the commercial puddings have too much sugar or other ingredients that we try to avoid, so I found a healthier way to enjoy pudding without sacrificing taste.
This dairy-free option is packed with flavor and fiber, so good for your taste buds and your gut.
Ingredients:
- 1- 1½ cups coconut milk
- 1 Tablespoon honey (you can use maple syrup instead if you don’t like honey)
- Pinch salt
- Powdered Cinnamon to taste
- 1 teaspoon Vanilla extract
- 1/4 cup chia seeds (black seeds or white seeds are ok, Organic seeds are best)
Optional- if you want chocolate flavor use 2-3 Tablespoons organic unsweetened Cocoa powder
Directions:
Mix all ingredients together and refrigerate for 4-6 hours.
Serve cold & enjoy!
Makes 4-6 servings.
