If you have been following my Instagram page recently, you’ll see I’ve been on a salad kick as it’s a great way to get a ton of veggies as part of your meal. This cucumber salad is an awesome meal by itself or as a side dish!
Ingredients:
- 3 cups of chopped cucumbers
- 3 tablespoons of fresh squeezed lemon juice
- 1/2 teaspoon of fine sea salt
- Freshly ground black pepper, to taste black
- 5 tablespoons of organic extra virgin olive oil
- 1 clove organic garlic, finely chopped
- 1 teaspoon organic coconut nectar or organic raw honey
Directions:
In a medium size bowl, add all ingredients except for the cucumbers.
Whisk together vigorously for 2 minutes, until nectar or honey is completely incorporated.
Next, add in the cucumbers and toss to coat evenly. Serve & Enjoy!
