This cucumber salad is great alone or as a side dish!

3 cups of chopped cucumbers
3 tablespoons of fresh squeezed lemon juice
1/2 teaspoon of fine sea salt
Freshly ground black pepper, to taste black
5 tablespoons of organic extra virgin olive oil
1 clove organic garlic, finely chopped
1 teaspoon organic coconut nectar or organic raw honey
In a medium size bowl, add all ingredients except for the cucumbers. Whisk together vigorously for 2 minutes, until nectar or honey is completely incorporated. Next, add in the cucumbers and toss to coat evenly. Serve & Enjoy!
