Ingredients

  • 1/4 cup organic coconut oil, melted and slightly cooled
  • 2 teaspoons organic flax meal
  • 4 ounces whole flax seeds, organic
  • 1 tablespoon organic cinnamon powder
  • 2 organic, pasture raised eggs
  • 1/4 teaspoon sea salt
  • 1 teaspoon baking soda
  • 4 ounces of applesauce, organic
  • 4 ounces of almond flour, organic
  • 3 ounces of coconut flour, organic
  • 2 teaspoons of arrowroot powder
  • 1 1/2 teaspoons of almond extract
  • 4 tablespoons of raw honey, maple syrup or coconut nectar

Directions

Preheat oven to 350 degrees Fahrenheit.

Mix all the dry ingredients in a medium size bowl and set aside. In another bowl mix eggs, applesauce, oil and sweetener together.

Combine wet and dry ingredients into one bowl and mix well to incorporate.

Line cookie sheet with unbleached parchment paper. Place tablespoon size balls of dough onto cookie sheet and lightly press down on cookie.

Place in oven and bake for 15-20 minutes or until golden brown.
