Cucumber and Lemon Vinaigrette Salad

Fresh cucumber and lemon vinaigrette salad combines crisp chopped cucumbers with a bright lemon-olive oil dressing seasoned with garlic, honey (or coconut nectar), sea salt, and cracked pepper for a hydrating, antioxidant-rich side dish that’s perfect with grilled proteins or light meals.

Ingredients

  • 3 cups of chopped cucumbers
  • 3 tablespoons of fresh squeezed lemon juice
  • 1/2 teaspoon of fine sea salt
  • Freshly ground black pepper, to taste black
  • 5 tablespoons of organic extra virgin olive oil
  • 1 clove organic garlic, finely chopped
  • 1 teaspoon organic coconut nectar or organic raw honey

If you have been following my Instagram page recently, you’ll see I’ve been on a salad kick as it’s a great way to get a ton of veggies as part of your meal. This cucumber salad is an awesome meal by itself or as a side dish!

Directions

In a medium size bowl, add all ingredients except for the cucumbers.

Whisk together vigorously for 2 minutes, until nectar or honey is completely incorporated.

Next, add in the cucumbers and toss to coat evenly. Serve & Enjoy!
