  • 4 organic, pasture raised eggs
  • Sea salt, to taste
  • Cracked black pepper, to taste
  • 2 tablespoons organic, flat leaf parsley, chopped

Start your day with a simple yet nutrient-packed twist on classic baked eggs — these Eggs Baked in Avocado pair creamy, heart-healthy avocado with pasture-raised eggs for a satisfying, protein-rich breakfast or brunch that feels indulgent but supports balanced energy and gut health.

Directions

Preheat oven to 425 F.

Create a small well in the center of the avocado. To do this, use a tablespoon and scoop out roughly 1 heaping tablespoon of avocado flesh. Crack one egg into the well, making sure to keep the yolk together. Do the same for the other 3 halves. Sprinkle with sea salt and pepper.

Place in oven and bake for about 15-16 minutes. Garnish with fresh chopped parsley and serve immediately. Enjoy.

A standard portion for this recipe is one half avocado stuffed with one egg.
